I have made similar calamari ripieni however after the calamari is sealed and the white wine added I then cover with a lid before placing in an oven for about 20 mins. When it is ready take the calamari out and rest then throw in some ligurian olives a touch more wine, a clear fish stockand then add the parsley, season and finish with EV olive oil. Slice the calamari and cover with the reduced sauce and olives. can also be finished with some crispy fried polenta instead of rice.
